Ratings can change from game to game. (Whether they're showing you more of the players actual hidden value (unmasking) or whether the player is actually regressing or improving is a determination a GM needs to make.) It might take a few games for the current ratings to get a little closer to their potential, and hopefully that's because the current is rising and not because the future is lowering.
I've never seen a player gain more than one (maybe two) experience points after just one game, though. It takes a lot of reps to change that number and preseason reps certainly don't hurt but you might not see any changes to those left numbers until the regular season starts.
